Recipe: Taunton Toasts

A recipe for the traditional Somerset twist on cheese on toast (essentially, with added cider!)

Ingredients (to make two slices)
2 thick slices of bread (sourdough is good – but any decent slice)
1 oz butter
1/2 teaspoon of wholegrain mustard
2 decent tablespoons Somerset cider
4 oz mature Somerset cheddar, grated
Salt and pepper to season

First, melt the butter in a saucepan. While stirring the melted butter, add the mustard, cider and cheese and continue stirring until the cheese has melted the mixture is smooth and creamy, then season with salt and pepper.  Lightly toast the bread on both sides, and then spread the mixture over one side of each slice. Then grill, with the mixture side up, until it begins to turns gold and starts to bubble. And then serve!
